Men nu har jag chansat lite. För jag tog och gjorde i ordning kycklingen och biffen. De står nu i ugnsfasta skålar och ska i god tid värmas i ugnen för att sedan avnjutas tillsamans med räkorna och riset som skall göras i ordning lagom till vi ska äta. Jag håller tummarna för att det skall fungera!
Läser man recept på kinamat används det ofta risvinäger, fick man inte tag på det kunde man använda torrt vitt vin. Själv var jag övertygad om att jag hade en skvätt vin kvar i en flaska, men icke då! Någon hade visst druckit upp det..
Men man tager vad man haver sa Cajsa Warg. ( jag har läst på lite och tydligen sa hon aldrig så..) Hur som helst så istället för att använda risvinäger blandade jag balsamvinäger och vitvinsvinäger, det fungerade finfint!!
Här kommer recepten på Linnéas hemmagjorda kinamat:
Het ingefärskyckling:
3 kycklingfileér
5 cm ingefära
2 chilifrukter (heta)
10 cm purjolök
1 röd paprika
3 msk chilisås
1 msk soya
1 msk balsamvinäger
½ msk vitvinsvinäger
ev nötter
Skär kycklingen i småbitar, stek dem i en panna med höga kanter. Skala och finhacka ingefära, hacka purjolök, dela och kärna ur chilin. Låt detta fräsa i pannan tillsammans med kycklingen. När kycklingen är genomstekt, slå över chilisås, soya och vinäger. Låt detta koka ihop en stund. Skär paprikan i stänger och låt de koka med de sista minuterna. Precis innan maten ska serveras, rör ev ner 2 dl valfria nötter. Biff med kastanj och bambu
4 skivor biff
1 stor gul lök
1 chili (het)
1 burk konserverade vattenkastanjer
1 burk konserverade bambuskott
1 grön paprika
2 msk soya
2 msk balsamvinäger
1 msk vitvinsvinäger
Strimla biff, chili och lök. Stek dem på hög värme i en stekpanna med höga kanter. När köttet är genomstekt, slå över vattenkastanjer och bambuskotten. Ha gärnai spadet från bambun. Smaksätt med soya, och vinäger. Skiva i paprikan på slutet.
Jag ska som sagt göra en rätt med räkor också, men den har jag inte påbörjat än. Med räkorna och ris är det tänkt att detta skall räcka till 4 personer.
