Ett litet missöde inträffade dock när jag skulle spritsa mina cupcakes, spritsen sprak och det blev frosting överallt! Därav är det ena fatet spritsat med riktigt munstycke medans det andra är ditfixat med hälp av en vanlig plastpåse.
Eftersom jag inte gått in riktigt i rollen som cupcakebakare så glömde jag att köpa något att dekorera dem med. Små söta hjärtan hade nog varit fint, eller vad tror ni?
Nu skulle jag ju behöva besöka panduro för att köpa upp mig på diverse nödvändiga cupcakesting, men eftersom vi ska resa till dessa bakverks hemland innom en mycket snar framtid får jag nog lugna mig lite. Det finns nog ett mycket större utbud av färg, formar och andra tillbehör där!
Blåbärs cupcakes med citronfrosting:
lite drygt 100 g margarin
2 dl socker
2 ägg
3 dl vetemjöl
2 tsk bakpulver
½ tsk salt
1 tsk vaniljsocker
½ dl mjölk
2 dl blåbär
Dela margarinet i mindre bitar och vispa det tillsammans med sockret poröst. Tillsätt äggen, ett i taget.
Rör ihop vetemjöl, bakpulver, salt och vaniljsocker och ha sedan i hälften av mjölblandingen i äggsmeten. Häll över mjölken och vispa tills alla klumpar är borta. Tillsätt sedan resten av mjölet. Vispa smeten slät. Ha i blåbären och rör tills hela smeten är blålila. Fyll upp till hälften muffinformar. Grädda i ca 15-20 minuter i 175 g.
Frosting:
50 g margarin (rumstempererat)
drygt 100 g philadelphiaost
2-3 msk citronsaft + lite rivet skal
minst ett paket florsocker
Rör margarin och philadelphiaost till en slät kräm. Ha i citronsaften och skalen. Vispa sedan i florsockret, lite i taget tills du fått en tjock smet. Smaka av och tillsätt ev lite mer citonsaft. Färga sedan krämen med valfri färg, finns att köpa på panduro.
Jag hade bara röd karamellfärg hemma så jag tog några stänk så frostingen blev rosa!
Ja visst ja, höll nästan på att glömma. De blev dundergoda!
