Så här i de första dagarna av 2009 passar jag på att visa er alla ett mycket smaskigt GI-recept. Vill man ha kolhydrater till så skulle det nog smaka riktigt gott med ugnsbakad potatis. Jag vet att många av er väljer bort kolhydrater och i ärlighetens namn smakar det precis lika bra med en härlig sallad till. Söta små körsbärstomater, mild rödlök, salt fetaost och vitlöksmarinerade svarta oliver. Nej, här saknade jag inte potatisen alls!
Valnötspanerad kyckling 2 pers:
2 kycklingfiléer
1 ägg
ca 2 dl valnötter
salt och peppar
Krossa eller hacka valnötterna. Smaksätt med salt och peppar.
Torka av filéerna med hushållspapper, knäck ägget i en kopp och pensla sedan kycklingen med ägg. Vänd i valnötter.
Lägg filéerna i en ugnsfastform och ugnsbaka i 175 grader i ca 30 minuter eller tills de är helt genomvita.
Till detta hade vi en enkel dressing/sås gjord på creme fraiche, vitlök, färsk basilika, salt och peppar.
Det här var riktigt gott och kan varmt rekommenderas!
