Många av er läsare har efterlyst receptet på denna moussetårta, självklart skall jag inte vara snål och självisk utan dela med mig. Det här är den första moussetårtan jag gjort som innehåller maräng, kanske är det den och hela 1 dl hallonlikör som gör detta till en helt underbar dessert?
Detta recept är aningens lite krångligt, kan jag tycka. Men tårtan blev helt otroligt god, så det är värt allt arbete!
Gör ett anslag (en tårtbotten) och dela den i två eller tre delar, beroende på hur hög du får den, spar en botten och frys in resten så har du på lager till nästa gång du skall göra denna underbara moussetårta!
Sockerlag:
1 1/2 dl vatten
2 dl socker
1 msk glykossirap eller honung
Blanda allt i en kastrull och låt det koka tills allt socker är löst, den skall komma upp i ca 107 grader.
Hallonpuré:
350 g hallon
1/2 dl sockerlag
Mixa hallonen med 1/2 dl av sockerlagen, sila detta och ställ åt sidan. Tag undan ca 4 msk av hallonpurén, den skall användas till gelén ovanpå tårtan.
Maräng:
1/2 dl socker
5 tsk vatten
1 äggvita
Koka en sockerlag av sockret och vattnet. Vispa äggvitan hårt och tillsätt sedan sockerlagen lite i taget, vispa nu på låg hastighet tills marängen svalnat helt. Du har nu gjort en italiensk maräng! Ställ åt sidan.
Mousse:
4 1/2 gelatinblad
hallonpué
3 äggulor
2 msk socker
italiensk maräng
1 dl hallonlikör
4 dl vispgrädde
Blötlägg gelatinbladen i kallt vatten. Vispa ägg och socker poröst, vänd i hallonpurén, häll upp detta i en kastrull och låt detta sjuda under omrörning tills det blir en kräm. Krama ur gelantinbladen och rör i dom i den varma hallonkrämen. Låt detta svalna.
Vispa undertiden grädden, vänd ner marängen och sedan hallonlikören i krämen, rör ner den vispade grädden.
Lägg kakbotten i en form med löstagbar botten. Blanda 1/2 dl av sockerlagen du gjorde i början med 1 msk av hallonpurén. Pensla botten med detta. Fyll sedan formen med moussen. Släta till och ställ sedan in formen i frysen för att stelna.
Moussen kan nu stå i frysen upp till ett par veckor innan den skall dekoreras och ätas.
Det finns otaliga sätt att dekorera tårtan, en variant är att göra ett lager av gelé och den gör du så här:
Lägg 3 gelatinblad i blöt, värm 1/2 dl sockerlag med 3 msk hallonpuré. Krama ur gelatinbladen och rör ned dom i den varma hallonpurén. Låt detta svalna och häll det sedan över den kalla moussetårtan.
