Det här är mitt absolut bästa ”fungerar både till vardag och fest” recept på lax. Du kan välja helt hur enkelt eller krångligt du vill göra det. Den mest avskalade och snabbaste varianten, är att ta en förpackning styckefrysta laxfiléer, bre en burk grön pesto över och sen skjuts in i ugnen. Du behöver inte ens vara matlagningsintresserad för att klara av det!
Men, nu råkar det vara så att jag inte är så förtjust i styckefrysta laxfiléer, visst det är riktigt smidigt när man har bråttom men de blir ofta lite torra och så är kilopriset hutlöst!
Så jag föreslår att du köper dig en hel laxsida istället. Den enda du behöver ta bort är skinnet, vilket är gjort på ett litet kick.
Jag har gjort den här laxen så många gånger och i så många varianter att jag inte riktigt vet hur orginalet skulle vara, men här kommer den senaste versionen, galet gott är vad det är!
Pestolax:
1 hel laxsida eller styckefrysta filéer om man så önskar
1 burk grön pesto á 185 g
3 vitlöksklyftor
1 citron
salt & peppar
Börja med att ta bort skinnet från laxen och skölj filén i iskallt vatten. Dela filén i lagom stora bitar och lägg i en ungssäker form (jag har använt en av mina finfina pajformar, perfekt att servera fisken ur sen!).
Hacka vitlöken fint och blanda den med peston. Dela på citronen och pressa ur saften. Rör om väl och fördela sedan peston på filéerna. Krydda ordentligt med salt och peppar. Värm ugnen till 200 grader och ställ in fisken. Låt laxen stå i den varma ugnen i ca 15-20 minuter. Men håll koll, den får inte bli för torr!
Blanda sedan ett par matskedar pesto i lite turksik yoghurt och ha till som dressnig.

Åh, pestolax är ju såå gott! Brukar också göra det emellanåt, det är även gott att använda röd pesto med soltorkade tomater och toppa med lite riven ost. Mums!
Åh lax och pest är verkligen en bra kombination. Har fått hem en hackmaskin så nu är det egen pesto som gäller. Mycket gott!
