Förra veckan var det ju som bekant den stora fettisdagen och det års semlor i varenda liten stuga runt om i Sverige. Jag bakade en omgång bullar som vi gjorde i ordning i P4 Västmanland. Sedan provsmakade vi lite andra sorters semlor men konstaterade att den klassiska var godast av dom alla. Några bullar fyllde jag och bjöd mamma och pappa på, men sedan hade jag ett helt gäng bullar över som började bli sådär småtorra och tråkiga. Av dom gjorde jag skorpor.
Det här blir perfekt vardagsskorpor. Som man doppar i kaffet en måndagsmorgon när man sitter och funderar över livet och den lille sonen för 10:de gången på lika många minuter slår ansiktet i barnstolen eftersom han envisas med att resa sig mot den.
Att göra skorpor av torra bullar är ett perfekt sätt att ta vara på gammalt bröd. Gör enligt följande:
Dela brödet i lagom stora bitar. Smält lite smör som du penslar brödet med. Strö över socker, kanel och eventuellt lite kardemumma. Lägg i en ugnsfast form eller på en plåt. Låt torka i ugnen på 200 °C i cirka 20 minuter. Vänd på dom efter halva tiden. Låt sedan skorporna torka i ugnens eftervärme, glänta gärna lite på ugnsluckan så att fukten kan pysa ut.
Förvara i en burk med lock.

Det är en mycket god idé, förutsatt att det finns bullar över. Här ligger de i frysen och väntar på att fyllas. Däremot brukar jag göra skorpströ av inkråmet.
Finns inget bättre än när allt kommer till användning. Precis så jobbar vi på vår krog.
När bullarna börjar bli torrra, testa att micra dom med ett glas vatten, så återfår dom lite saftighet… annars är det toppen att dela dom och steka i smör med socker och kanel och sedan servera med grädde eller glass. Typ som fattiga riddare 🙂
