Här om veckan fiskade jag upp ett stycke rostbiff som låg i frysen. Det är ofta den köttbiten som blir kvar hos oss, när frysen är fylld går alltid biff, entrecôte, grytbitar och köttfärs först. Sedan innanlår och oxfilé. Kvar blir ett gäng stekar, ytterlår och så rostbiffen.
Varför denna fantastiska bit blir kvar vet jag inte, men så här på sommaren är det ju den perfekta maten. Antingen kan du slänga den på grillen, skär då köttet i tjocka skivor när det är klart.
Eller så gör du en klassisk rostbiff i ugn. Då kan du ha den till en matig sallad, till potatissallad eller varför inte göra riktiga gourmetsmörgåsar att ta med till sjön? När det är riktigt varmt ute äter jag ogärna varm mat, därför passar ju rostbiff perfekt!
Rostbiff:
drygt 1 kg rostbiff
smör att steka i
rosmarin och timjan
svartpeppar
Bryn köttet runt om i en het panna. Finhacka örterna och lägg dem tillsammans med nymalen svartpeppar i en ugnsform. Lägg i köttbiten och ”klappa” runt kryddorna så de täcker hela rostbiffen. Värm ugnen till 120 grader, ställ in rostbiffen längst ned i ugnen.
Stick i en kötttermometer, när termometern visar 55 grader, tag ut köttet, linda in det i ugnsfolie och låt vila. När köttet svalnat, skär upp det i tunna skivor.

Rostbiffen ser helt perfekt ut i färgen. Jag tycker det ska vara potatissallad eller pastasallad till. Detta får gärna piffas extra med ett antal goda och fräscha frukter

Usually I prefer fis with lemon and some vegetables bbut when I see your work and your photo I can smell the flavour of this perfect rossbif !!

Får jag rekommendera dig att prova tillagning av ”Tjälknöl”,
eftersom du har fryst kött – det ska tillagas i ca 80 grader ett
antal timmar. Sedan ska det ligga ca 5 timmar i en smakrik
lag. Serveras därefter som rostbiff, men köttet smakar så mycket mer.
