Vilket typiskt oktoberväder som rasar ute idag! Regnet smattrar mot rutan och alla miljontals vackra höstlöv störtdyker till marken i vinden. Men man får ta det onda med det goda. Dagar som dessa är det bara att ta fram stora grytan och koka soppa. Sleva upp i stora lass, i med en klick turkisk yoghurt och för den optimala lyxen, servera ett par skivor pinfärsk bröd till. Hur ska man annars få upp det där sista av soppan som alltid blir kvar i skålen?
En av mina absoluta favoriter när det kommer till enkla soppor är en köttfärs- och morotssoppa mamma brukar göra (som jag tror kom till genom ett misstag då hon först läste halva receptet av köttfärssoppa och sedan fortsatte med slutet till vegetarisk lasagne.. Soppan är nu en klassiker hos oss, men mer om det en annan dag!)
Fördelen med soppa är att man kan koka den på en spik och en höft. Det behöver inte vara så blodigt allvar, ta av vad du har hemma och smaka dig fram.
Köttfärssoppa:
600 g nötfärs
200 g fryst majs
1 gul lök
1 fp krossade tomater
1 burk salsa av valfri styrka
5 dl köttbuljong
1 msk spiskummin
1/2 msk paprikapulver
lite chili
en skvätt rödvin
1 burk black eye-bönor
salt & svartpeppar
ev mer vatten/buljong
Bryn nötfärsen i en stekpanna. Finhacka löken och stek den tillsammans med majsen i en gryta, ha över köttfärsen, krossade tomater, salsa och buljong. Låt koka upp, smaksätt med spiskummin, paprika, chili och en skvätt rödvin efter smak. Låt koka ca 10 minuter. Skölj bönorna och blanda i. Om soppan känns för stabbig, späd med mer buljong eller lite vatten. Är den för lös kan den koka ett par minuter till. Svårare än så är det liksom inte!
