Vi fortsätter med lite lättsam bakning. Sådant om passar att göra med en uttråkad 2-åring eller om man själv bara vill slänga ihop goda kakor lite snabbt.
Kokostoppar är kakor jag inte bakar så ofta tyvärr, vilket är synd för de är ju sådär ruskigt enkla att göra. Hela smeten görs i samma kastrull som du smälter smöret i. Sådant gillar jag. Minimalt med disk efteråt nämligen! Kakorna är som de flesta andra småkakor enkla att variera och smaksätta med vad man är sugen på för stunden. Idag tog vi i lite vanilj. Annars är olika citrusfrukter eller likörer en riktig vinnare.
Den stora frågan är ju sedan, doppa eller inte doppa? Självklart är det lite lyxigare om man tar sig tiden att toppa botten i choklad, men jag tycker dom nästan är snäppet godare bara som dom är. Vad tycker du?
Linnéas kokostoppar med vanilj, ca 16 stycken:
50 g smör
0.75 dl strösocker
2 ägg
1 knivsudd vaniljpulver
200 g riven kokos
Smält smöret i en kastrull och blanda i sockret. Rör sedan i äggen, ett i taget. Ha i vanilj och kokos. Låt smeten stå och svälla 10-15 minuter.
Lägg ett bakplåtspapper på en plåt och forma smeten till konformade kakor med hjälp av händerna. Om du tycker det blir för kladdigt och svårt att få till kakorna kan du tvätta händerna i kallt vatten då och då.
Grädda i 175 °C i cirka 15 minuter.
Låt svalna på plåten helt. Doppa eventuellt botten i smält choklad.
Perfekta kakor att bjuda på om du får gäster som inte tål gluten!
