Riktigt tunna pannkakor är precis som pannbiffar, något som bara mormor kan göra. Hur man än vrider och vänder på det blir aldrig mina pannkakor lika tunna och pannbiffarna lika goda som de mormor gör. Åtskilliga är de gånger jag setat på mormors kökssoffa, känt köket fyllas med os och se högen med pannkakor sakta växa. Man tycker att jag borde ha snappat upp vad för trix hon använder, men icke. Själv påstår hon att hon bara gör helt vanliga pannkakor, som hon alltid har gjort. Och kanske är det just det, att hon stått där i sitt kök och gräddat pannkakor så många gånger i sitt liv att de inte kan bli dåligt?
Eftersom jag inte får mina pannkakor att smaka som mormors provade jag idag att göra något helt annat. En blanding mellan svenska och amerikanska pannkakor, lite mindre mjölk och en skvätt bakpulver gjorde att de blev tunna men ändå tjocka på något konstigt vis. Men goda blev de!
Svenska-Amerikanskapannkakor ca 12 stycken:
3 ägg
2 1/2 dl vetemjöl
4 dl standardmjölk
1 tsk bakpulver
1 tsk vaniljsocker
1 nypa salt
Vispa ägg, mjöl och hälften av mjölken klumpfritt. Tillsätt resterande mjölk, bakpulver, vaniljsocker och salt. Hetta upp en pannkakslagg och klicka i lite smör, ha i ca 0,75 dl smet och vicka runt det tills det täcker hela laggen. Grädda tills de är gyllenbruna på båda sidor, upprepa med resten av smeten.
Servera med god sylt och en klick grädde.

Håller helt med! Men tror hemligheten ligger i smöret, iaf när det gäller min mormor!
Brukar också använda lite bakpulver i min pannkakssmet. blir lite mer volym på de då, pannkakor är så gott, får nog bli lite pannkakor i veckan som kommer

TUNN smet!!
Har nog gjort pannkakor sen jag var 10 år. ( är 31 år) Inte ett recept så långt ögat kan nå. Höfta tills smeten är lätt och smidig utan att rinna. Då får man den bästa pannkakan.
Sen skadar det inte att ha mkt smör i pannan, då snackar vi godare än godast=)
Prova med en crèpe smet så kanske du kan få dem tunna.
Jag brukar vispa ägg, mjöl och ngn msk mjölk först så att det blir en seg smet där man nästan kan se gluten"trådarna", sen vispar jag i resten av mjölken och låter smeten stå en stund, ju längre desto bättre. Då brukar smeten hålla ihop bättre och det blir enklare att göra tunna pannakakor.
Barnsligt gott med pankakor. Love it!! Blev sugen på göra det, länge sen sist.

Precis som någon skrev ovan ligger hemligheten i smöret. Och den hemligheten är inte nyttig. Ju mer smör desto tunnare pannkakor går det att få. Min farmor gör enligt mig världens godaste pannkakor 🙂 Men det är endast för att jag inte vet om hur pass mkt smör hon faktiskt använder 😛
Jag gör alltid pannkakor utan ägg och med liten nypa bakpulver och vaniljsocker. Vi har en son som äter lite dåligt så vi gör pannkakor rätt ofta och äter med mosade bär, men det känns i alla fall lite bättre att använda grövre mjöl ibland. De bästa pannkakorna görs i alla fall med vetemjöl och en väldigt tunn smet, det ska inte vara mycket konsistens alls på smeten -så att den åker ut snabbt när man vänder stekpannan ett varv, en lagom het panna och en snar vändning, då blir det precis så tunt och gott!:)
